Slimming World Toffee Apple Pancakes.

I have gone to Autumn Town and I am never coming back. With the spooky season rolling in, I thought it was time to fully embrace it in the form of a well-loved American pancake stack. 

Slimming World Toffee Apple Pancake Stack

So the pancake making is back! I have said this before, and I’ll say it again. This is one of my all-time favourite breakfasts. The difference with this stack is it contains the 3 autumn staple flavours: toffee, apple and cinnamon. Does it really get more autumnal than that?! Adding cinnamon to the pancake mixture was the subtle addition this stack needed to give it an edge compared to my previous one (you can find that recipe here). 
However, a little cinnamon goes a long way, so half a tsp is the maximum amount you’ll want to add to the mixture. 

I NEEDED to fill my autumn craving and this toffee apple stack did it. The fluffy pancakes doused in sticky toffee sauce were complimented by the sharpness of a juicy apple, therefore making this stack damn delicious. You’ll have to try it for yourself if you don’t believe me!

It’s been a while since I’ve talked about pancakes on here so I need to say this again. These toffee apple pancakes are packed with the same thickness of an American-style pancake while being entirely guilt free! They are only 479 calories (all toppings included) and 4 syns in total for Slimming Worlders. Not bad for a pancake stack eh?

Slimming World Toffee Apple Pancakes.

Kick off Autumn right with this brekkie!



40g of oats

2 eggs

4 tbsp of fat free natural/Greek yoghurt

½ a tsp of vanilla extract

½ a tsp of baking powder

1 tbsp of granulated sweetener. I use Canderel.


1 tbsp of Askeys toffee sauce

Half a Pink Lady Apple

1/2 tsp of cinnamon with a tad extra to dust

Sainsburys gold stars

12.5 g of Anchor light cream 


Blitz your oats in a blender or food processor until it resembles powder. I use a this Nutribullet.

Separate out your egg yolks and whisk the whites until they form stiff peaks for super fluffiness! Or you can add the eggs as they are. Some days I separate, some days I don’t. Both options are fine and will make that desired American stack .

Mix in the remaining ingredients. Make sure all the oats are scraped from the edges of the bowl.

Heat your pan to a medium heat and spray with a low calorie cooking spray. I personally use the dieters’ favourite, Frylight.

Dollop on about a tablespoon of the mixture until it forms a a small, round-sized patty shape. Alternatively, you can use a single egg pan to create that perfect circle!

Leave for a minute or two and when the edges start to look like they are setting, flip that pancake over. Some small bubbles may appear on top which is also a sign that they’re about ready.

The other side may splat where it’s still raw. Use your spatula to scoop it back in and refine the patty and leave for another minute or two. (Handy trick: using a single egg-sized pan means this is less likely to happen). Leave for another minute or two.

Flip over again (the pancake, not you) and check both sides are golden in colour. Press down to check the inside is done too. If anything oozes out, leave it for a tad longer. By all means, have a gooey pancake if you want. I won’t judge… But I would not recommend.

Slide that fluffy angel from the pan and onto a plate. Spray the pan with some more Frylight and repeat steps 5-8 until all the batter is used up.


Once stacked, add the apple to the top of the pancakes and dot the rest around your plate.

Sprinkle with a pinch of cinnamon and drizzle on the tbsp of toffee sauce. Measure out your cream and plop it on top. WARNING: may come with the extreme urge to squirt some directly into your mouth. Then, add any remaining sauce from the spoon on top. To finish off, sprinkle some golden stars and enjoy!
