I have a deep love for this classic Spanish dish, and while it may not be the traditional seafood fiesta normally served up, the flavour is most certainly not compromised. It is a super snug dish that greatly accompanies the colder evenings that are creeping in.
Paprika, chicken and chorizo paella=smugness.
The walk over to the dinner table with this Paprika, Chicken and Chorizo Paella was one of those self-righteous walks as I thought to myself: ‘Slimming World is amazing’. It tastes like pure filth (the good kind) and has helped me cure my hangovers for the last couple weeks. Student problems, am I right?
I learnt this recipe from one of my closest friends (thanks by the way pal). We have shared this for dinner numerous times and every time as I take my first mouthful, I shake my head in disbelief that it really does taste as good as I remember. I also wag my fork at the paprika infused dish and say ‘you’ve done it again’ and then proceed to scoop up another chunk of chicken. Paprika, chicken and chorizo paella never fails to amaze me.

A few weeks ago, I decided to give making the flavourful Spanish dish a crack for myself. As I watched my friend sprinkle the paprika over the juicy chicken and chorizo chunks, I thought my turn at cooking it was well overdue. I grabbed my swimming goggles and began chopping the onion, garlic and pepper (because I refuse to cry over an onion any more). I submerged the paella rice in chicken stock and dusted it all with a gentle amount of chilli flakes. Before I knew it, half an hour has passed and everything had come together; it was time to eat! I was on my way to flavour town yet again, and I was not disappointed. Trust me, neither will you be.

A tasty Slimming World Paella.
1 box of paella rice
100g of chorizo sausage
400g of diced chicken
4 tbsp of paprika
1 tbsp of garlic powder
1.5 tsp of chilli flakes
1 medium white onion
1 yellow or orange pepper
3 chicken stock pots
Start off by bringing your pot/deep pan to a high heat and spray with some Frylight. Add the diced chicken and allow them to whiten. Meanwhile, chop your vegetables and chorizo and add them to the juicy chicken.
Fill up your kettle to the highest allowance and boil and then add the entire box of paella rice to the chicken, chorizo and veg mix. Stir well. Turn the heat down to a medium heat and once the kettle water has bubbled and boiled, place 1 chicken stock pot into a jug. Pour 500ml of boiling water over the little flavour packed pot, mix with a fork and until the pot has dissolved. Pour the chicken broth over the rice, veg and meat and stir.
Once measured, add your spices and get ready to punch this dish in the face with flavour. While the spicy magic is happening (make sure to stir frequently) and the water has reduced, repeat step 2 by placing another stock pot into the jug and filling up with 500ml of boiling water. Stir until the pot has dissolved and pour over the paella again; make sure to stir frequently. When the water has reduced again, repeat step 2 again, but this time, adding the water bit by bit; ensuring most of the rice is covered by water and until you have a saucy and sticky consistency. You may not use all of this stock pot.
After the rice has softened (this should take about 30 minutes including steps 2-3) and you have the consistency you like, get ready to plop this delicious bad boy onto 4 plates. If you fancy being a little adventurous, add some cheese into your portion (trust me).
