Another recipe to thank PinchofNom for! I had Cheesy Leeks On Toast for breakfast last week and it was 10/10. I will be having this again!
Fancy cheese on toast.
This recipe is basically a fancy version of cheese on toast with an added health kick. You get one of your five a day and two types of cheeses in one breakfast. Can I get a hell yeah for Cheesy Leeks on Toast?! The strong parmesan, the smooth cheddar cheese and the subtle tang of the leeks really makes this a breakfast to remember. Also, best of all, it takes a mere 15 minutes to make!
What I needed for Cheesy Leeks on Toast:Print
A recipe to spice up your standard cheese on toast.
Half a leek
50-75ml of skimmed milk
15g of Italian hard cheese
15g of reduced fat cheddar cheese
1/2 a tsp of mustard powder
Salt and pepper to taste
2 Slices of medium sliced, 400g, wholemeal bread
Measure out the skimmed milk, Italian hard cheese and light cheddar cheese (part hexa).
Chop up half a leek, fry off in some frylight for around 5 minutes and then add about 50ml of the milk, stir well and bring to the boil. Once mixed add the mustard powder, both cheeses, on a low heat, until melted and combined. Add the left over milk if needed, if the mixture is too thcik for your liking and sprinkle on some salt and pepper to taste.
Turn on your oven grill to about 200°C, and while its heating, toast your bread (hexb).
Once toasted, plop the mixture on top of the slices, and place under the grill for 2-3 minutes.
Once grilled, serve immediatley.
I used sainsburys free from italian cheese and for the amount in this recipe it’s roughly 2.5 syns.
