Slimming World Black Forest Roulade

It’s officially December which basically means it’s Christmas. Sooooooo…MERRY CHRISTMAS! I’ve kicked off the festive season with one of my favourite wintery flavours. Black Forest. Any other Black Forest lovers out there?! This time, the amazing flavour has been wrapped up in the form of a Black Forest Roulade. Yum!

It’s light, but deeply chocolatey and the sweet cherries add a great burst of flavour. The sweet cream in the middle helps wrap and bring all the flavours together to create and winter treat full of goodness without compromising your diet!

Description

Black forest roulade.

Ingredients

4 eggs

30g of cocoa powder

4 tbsp of granulated sweetener

2 tsp of vanilla extract 

1/2 a tub of 250g fat free Quark

100g of cherries


Instructions

Pre-heat the oven to 180 and seperate the eggs. Whisk the egg whites until they form stiff peaks.

Add the cocoa powder, egg yolks, 2 tbsp of the sweetener, 1 tsp of the vanilla extract and the quark.

Fold the ingredients together (do not whisk or stir!!) until fully combined, it should form a brown mixture.

Line your roulade tray with greaseproof paper and pour on the mixture. Even out the edges slightly so it forms a sort of rectangle.

Bake for 12-15 minutes and once cooked (prod with a cocktail stick and it should come out clean if done) leave to cool. 

Once cool, mix together the leftover quark, sweetener and vanilla extract. Spread this mix ontop of the sponge and then top with the cherries. 

Then, roll up the roulade (from the short ends) into a tube shape. Do this slowly to avoid any cracking. 

Cut into six pieces and enjoy!
