Healthier Pasta Carbonara (Slimming World Friendly).

Yes it’s cheesy. Yes it’s healthy. Yes it is the literal bomb. It doesn’t always need to be fancy because simplicity goes a long way, and this pasta carbonara proves that.

Gimme the cheese.

I am a long-time lover of pasta, so when I discovered this healthy cheese sauce a whole new world of feelings opened up for me, shock being one of the first ones. Cheese sauce on a diet?! “No way Jose” I thought to myself, but the legend is true, and it’s called Eat Lean Cheese. This cheese is the one for me, and here’s why: before Eat Lean, I was having 40g of reduced fat cheddar as 1 healthy extra A on Slimming World, but with Eat Lean you can have up to 70g of cheese, and it still counts as 1! (This is not sponsor, I swear). You know what this means, right? More cheesy goodness, my good friend. 

I took a few twists and turns before compiling my pasta carbonara.

I am usually more partial to a tomato-based dish packed with chopped onion, crunchy garlic and a hint of fresh basil. But I have grown – evolved, you could say. I have come to realise just how good this creamy dish is and have become impartial to both.

This pasta carbonara has been doused with a few of my own personal twists. To start, using cheddar cheese! By all means use the traditional pecorino cheese, but Slimming Worlders if you use pecorino, make sure you use 30g of this instead of the 40g stated in the recipe to keep it within range of your healthy extra A. Continuing the story of my personal twists, I added chopped French beans from my brother’s garden to give it a mild sweetness, some diced garlic to add a slight salty sharpness and, going back to the roots of the dish, some smoky bacon.

So, before I make your mouth water any more (grab that tissue Tilly and clean up!), it is time to visit the rich and creamy side of Italy by rustling up this Healthy Pasta Carbonara!

Healthy Pasta Carbonara (Slimming World Friendly).

Yes it’s cheesy. Yes it’s healthy. Yes it is the literal bomb. It’s time to visit the creamy side of Italy by rustling up this healthy pasta carbonara.

Ingredients

75g of any pasta, I used Penne

40g of reduced fat cheddar (or 30g of pecorino)

Desired amount of french beans, chopped

Teaspoon of diced garlic, I used this to speed things up

2 medium/large eggs (separated)

2 bacon medallions, chopped

Frylight

Salt and pepper to taste


Instructions

Firstly, measure out your pasta, cover with boiling water and let the Penne bubble for 10-15 minutes on  a semi-high heat. 

Heat up a small pan, spritz some Frylight and cook your smoky bacon.

Meanwhile, grate and measure out the cheese, chop your french beans and prep the garlic. Once the veg is chopped, add them to the pasta to boil and soften. 

Humpty Dumpty the eggs and crack them open into a bowl. Now, this is a trick I recently learnt, so it may take a couple tries…or five. Grab an empty plastic water bottle and remove the cap. Tilt the bowl with the eggs and the bottle slightly towards you. Squeeze the bottle fairly tight, hold and place the rim of it gently on top of one of the yolks. Release your squeeze and watch that little yolk get sucked in like a binge watcher finding a new Netflix series.  In a separate bowl, pour out the yolk and repeat with the second egg.  Once done, stir the 2 yolks until smooth and discard of the egg whites. 

When your timer has announced the completion of the pasta and veg, strain with a colander and place back into the saucepan. Turn the heat down very low and stir the pasta/veg mix. While mixing, sprinkle in about half of the cheese and the egg yolks, it is important to keep up the stirring so the egg does not scramble. After about a minute has passed, add the remaining cheese and blend well. To thin out the sauce slightly, add a 25-50ml of hot water. The magnifico veggie, pasta, cheese blend should start squelching and look smooth (no lumps). 

Serve with salt and pepper to taste and listen to your taste buds thanking you!

  1. I love the french beans in this, I look for ways to put vegetables in meals that don’t usually have them and this works really well
